There are over 3k videos for creating logos with illustrator in youtube. Use the search from youtube, i think you will find a good video for your work.

There are a lot of areas online where you can find template .psd's Sometimes the best thing to do is find an ebook template out on the web, it then makes it a little easier and faster to design the cover, as you would spend less time designing the book itself. I normally do that with product boxes, CD or DVD cases and the like. The rest is more or less up to what you would like to do. What could help is sketching the ebook on paper first, with all the elements you would like to use on it, and then fire up Photoshop and start creating what you designed on paper. Once you get a look at the ebook in color, you can then decide on which elements you want to change or keep.
