Hi LesleyFox,
Basically, a canonical URL is the search engine friendly URL you want displayed. In other words, it's the URL you want visitors to see.
For instance, a visitor coming to this forum can type in http://www.imtalk.org or http://www.imtalk.org or even http://imtalk.org. These all represent the same page.
However, Nemanja has it set that no matter which one you go to, it will display as http://www.imtalk.org and that is also what is shown in the search engines.

Cannonical is a meta tag, which can be used to show of google dublicate content for internal pages ( most used for that ). Wordpress is a great example for cannonical tags - you need to ( YES , recommended ) install ALL IN ONE SEO plugin, so you can cannonicalize your /tags/ and /archive/ page to your post page. For example http://mysite.com/my-first-post have the exact content as : http://mysite.com/archives/1/my-first-page and you need to give of your archives posts cannonical to the original content ( your post ).

OH MAN... just fuckin google it, please. cannonical is just a <meta> tag that helps of google to clean up some dublicate content.
